Keto/Low Carb Cheezit Recipe

I've been on the hunt for a good keto/low carb Cheezit recipe since my husband and I started a new diet. I needed to find a cracker substitute to curb my cravings for those delicious, cheesy bites. Thus, the no carb cheezit has been born! Scroll to the bottom for the recipe if you want to get right it. Otherwise, I will give you some tips in the middle portions of this post, if you're interested.

Ok, let's start with the basics! I've found that the best consistency with these cheese crackers comes with using the deli ultra thin sliced cheese. Sargento has different types of cheese flavors. But, I've found that my store brand thin sliced cheese, in sharp cheddar, is my personal favorite. I like to add a little seasoning, but its definitely not necessary. My favorite's are Trader Joe's 21 Seasoning Salute (which I used in this batch), as well as their Everything But the Bagel seasoning. What is  great about these crackers, are that you can try any seasoning that fits your palate. Also, you'll need a little salt to add to the crackers, if your seasoning doesn't have salt included. 


Line your large sheet pan with parchment paper. Then take 6 slices of cheese and cut them into 4 squares. If you want the exact look of the cheezits, you can use a straw to make a hole in the middle (but, if you ask me, that's just a waist of cheese...I want it all😜). Vertically, you'll have 4 squares by 6 rows horizontally. You don't want them to be too close, as they may expand a little. Sprinkle your seasoning/salt on the crackers and bake in a preheated oven at 260 for 40-50 minutes. You are looking for a darker color on the cracker to know they are done. Once you pull them out of the let them cool for 5-10 minutes.


Remove them from pan carefully and place on a paper towel. You'll not want to skip this step, as its important to get some of the grease off the cracker. Wipe the parchment paper to get rid of any grease, and add another 6 cut pieces of cheese. Note: if you choose to use a thicker cut of cheese, you'll need to add a longer cooking time. Low and slow is the key to keeping the shape of these crackers.


Tah-Dah!! Now it is time to enjoy those delicious bites of cheese! Since the Ultra Thin slices are 40 calories a slice, each cracker is only 10 calories. Let me know what you think of them!

Large Baking Sheet Pan

Parchment Paper

Paper Towel

Trader Joe's 21 Seasoning Salute (or any other seasoning)

Salt Package of Thin Sliced Sharp Cheddar Cheese (Sargento, Store Brand, see Tips above)


Preheat over to 260 degrees. Line baking sheet with parchment paper. Slice 6 pieces of cheese into 4 squares. Place squares 4 vertically by 6 across, leaving a little space between each square. Bake for 40-50 minutes until crackers have started to lightly brown. Let cool for 5-10 minutes, and then place on a paper towel to remove excess grease. Wipe parchment paper to remove grease from crackers and continue baking another group of crackers. 

Enjoy the delicious crunch of the crackers! It pairs well with a little red wine 😉
